Fillet "Elena" Rezerva

This traditional Bulgarian product is recognized in the European Community for food with specific traditional character. As such, it is prepared in strict compliance with the traditional technology of pork loin, which is salted, then dried and matured until ready. During drying, the fillets are pressed repeatedly, and lose about 50 to 55% of their weight. The process of maturing and drying, as well as the top layer of herbs, form its mild taste and original aromatic bouquet. Used alone and in combination with other dried appetizers or cheeses. Perfectly combined with all types of red wines. Natural product that does not contain meat substitutes, GMO and gluten.
