Fillet "Elena" Molerite

This traditional Bulgarian product is recognized in the European Community for food with specific traditional character. As such, it is prepared in strict compliance with the traditional technology of pork loin, which is salted, then dried and matured until ready. During drying, the fillets are pressed repeatedly. The process of maturing and drying, as well as the top layer of herbs, form its mild taste and original aromatic bouquet. Used alone and in combination with other dried appetizers or cheeses. Perfectly combined with all types of red wines. 100g product are made from 185g fresh fillet.
